Bamboo pickles originated in the 1940s in Wilkes County, NC. In 2007 and after three generations this North Carolina family recipe made its debut into the culinary world. Bamboo Pickles are completely hand processed, from grove to table. The bamboo is hand harvested from North Carolina bamboo groves. Bamboo Pickles have received various national recognition for their taste and uniqueness, including a taste-test award from Cooking Light magazine in the Artisanal Foods category.
